Jay Morjaria's Korean 'Anju' Menu at Untitled Bar in Dalston



Jay Morjaria, a chef who has popped up regularly around London for the past few years, is starting a new semi-permanent residency at Untitled Bar at 538 Kingsland Road in Dalston on Thursdays 3rd September, to to open Thursday to Saturday evenings.  The menu will be Jay's own take on Korea's 'Anju' term - essentially food consumed with alcohol - so expect lots of small plates with big, Asian flavours.  It sounds great! 

"Jay Morjaria, who proudly includes running London’s first vegetarian cookery school as well as a stint on Million Pound Menu on his CV, today launches a semi-permanent residency called JAE at Dalston’s coolest cocktail bar Untitled, kicking off on Thursday 3rd September and running between Thursday and Saturday nights thereafter.
Jay brings his own version of Korea’s famous anju food to the table here:  food that is perfect for drinking with in the form of small plates with big flavours that quench both thirst and hunger in a neat little snack.  Whilst the plates will change seasonally, the big hitters on this succinct menu include Grilled padrĂ³n peppers with whipped feta and shin cup seasoning – a rather naughty sprinkling of salty chilli – kimchi, devilled eggs, crispy shallots – embellished with jewel-like specks of dried nori….Tartar, sesame emulsion, herbs, on a shiso leaf – beautifully kick-ish but sublime at the same time.  
Other classics on the JAE menu will include the day boat crudo with apricot and leche de tigre, the Dusty Knuckle sourdough with a spring onion and ginger butter with pickles, and the cold soba noodle salad with sweet and sour gochucharu dressing & cucumber salad.  Veggies and vegans are well catered for and each dish has been created to be eaten by hand, a ‘pop in the mouth’ vibe.
Morjaria is no stranger to flavour.  He was brought up in a family of fruit and veg wholesalers cum restaurateurs – his father was amongst the first people to bring exotic foodstuffs into the UK in the 1970s. After a short stint in the art and design world, Jay was lured into the food world and opened London’s first vegetarian cookery school, Sutra Kitchen, in Kingly Court."
