Loafing Cafes owner Susie Mc Duell has teamed up with Federico Perez Diaz and Michael Kutziola to create the authentic Mexican pop-up.
Federico Perez Diaz and Michael Kutziola, who met while running Marco Pierre White’s Frankie’s bar and grill in London Selfridge’s in 2010. They have worked in restaurants together ever since, most recently running Mexican and Argentinean food stalls in London’s Portobello Market. This will be the first pop-up residency the duo has embarked upon.
Slow cooked sous vide meats will be the focus on the menu with pork belly and short rib beef cooked for 24 hours in La Pilarica spices to enhance flavour and tenderness. The menu will feature a range of Burritos, Mexican salads and Mexican pulled pork burger in a brioche bun. Sides will include quesadillas, tortilla chips, homemade Mexican salsa, guacamole and tacos along with Mexican fruit sodas."
