Brat's Summer 2020 Residency at Climpson's Arch in London Fields, E8



Chef Tomos Parry's Brat restaurant will be opening a pop-up at Climpson's Arch near London Fields (Hackney) E8 for summer 2020, opening daily from Saturday 11th July.  They will be cooking on wood ovens, with expected dishes including grilled Crocadon Farm aged mutton chops, and Basque fish soup with Cornish velvet crabs.  Booking has already opened; get involved here.

It's great to see residencies back at Climpson's Arch.  A few years ago there were several pop-ups there, including Som Saa, the excellent Thai restaurant that had people queueing round the block.  I suspect this one will be equally popular; see you there!

"This summer Tomos Parry will be bringing Brat outdoors to Climpson’s Arch. Lighting the wood ovens once again to serve whole roasted turbot, spider crab and grilled breads in East London’s well-loved courtyard.
By day the arch is home to Climpson’s & Sons coffee roasters, but by night has a longstanding reputation for hosting some of the city’s most exciting chefs and restaurants. Past chefs include Som Saa, Dave Pynt from Burnt Ends and Leandro Carreira. Tomos is well acquainted with the arch as he headed up their kitchen from 2013 - 2015, developing his style of cooking: seasonal produce grilled over fire.
Brat opened in 2018, a restaurant which is inspired by his Welsh heritage and the open-fired grilling techniques found in Northern Spain’s Basque country. The same year Brat quickly won its first Michelin star and was voted London’s best restaurant by National Restaurant Awards 2019. Tomos’ return to the arch this summer plans to retrace the dishes and fire techniques which were originally conceived in the sunshine at Climpson’s arch.
The daily menu will showcase native seasonal produce sourced from some of the best producers in the UK such as Dan Cox’s Crocadon Farm in Cornwall and Calixta Kilander’s Flourish Farm in Cambridge. Along with Brat favourites, diners can expect new dishes; grilled Crocadon Farm aged mutton chops, petit snap greens with smoked new season garlic, homemade ricotta and unfiltered olive oil, Basque fish soup with Cornish velvet crabs and a salad of slow-grilled pollock, laverbread and tomatoes."
