Michael Thompson's 3 Night 'Fodder' Pop-up at Borough Wines in Essex Road, N1


On Thursday 15th - Saturday 17th June, chef Michael Thompson - ex of Fera @Claridges and elsewhere - will be presenting a 9 course tasting menu, using locally grown and sourced food, and the new pop-up space under Borough Wines in Essex Road, N1.  Tickets are just £45, with extra options including wine and beer flights, and sitting at the chef's table.  Has to be done!

"Borough Wines & Beers is hosting a new pop-up as part of its chef development series, in partnership with chef Michael Thompson. Thompson’s ‘fodder’ project, will be the third pop-up dining event at Brewery Below, the nano brewery and event space at Borough Wines’ Essex Road (Islington) shop.
Fresh from Simon Rogan’s (now-former) kitchen at Fera @ Claridge’s, Michael Thompson has created fodder as his first solo dining concept. The pop-up will run on 15th, 16th and 17th June 2017. Brewery Below launched earlier this year with two pop-ups by The YBFs 2015 winner, chef Adam Rawson, the Japanese-inspired Sakura and Rawmen.
Michael has created a nine-course tasting menu using local, seasonal ingredients and produce found growing in the wild (much of which he has picked himself). In keeping with the local theme, Michael has sourced much of the produce from the Food Assembly (www.thefoodassembly.com), a network of neighbourhood food markets championing local producers. He has also teamed up with Hackney studio The Clay Collective (www.clay-collective.com), to design a bespoke set of plates for the pop-up, which will be available to purchase on the night.
Highlights from the menu include:
Chicken fat bao with ramsons
Crispy oyster and apple kombucha
Crab, elderflower and torched tomatoes
Set birch sap and beech leaf, acidic soft herbs and flowers
Michael says: “The thinking behind fodder stems from my time working with Simon Rogan and Dan Cox at Fera @ Claridges. The emphasis on quality produce has been ingrained in me and is at the forefront of the menu: expect familiar flavours as well as new, intriguing ones. London is full of vegetation and wild foods, so I want to showcase what we have on our doorsteps. There is also an element of preservation: extending the shelf-life of produce. Ihope we can pass on a few recipes and methods as well as share an evening of brilliant food together. Borough Wines was the perfect fit to partner with as they are a local business with strong links with the community and a great reputation for natural and organic wines.”"
