David Ahern, formerly of The Ship, The Engineer, Ben's Canteen & Burger Breakout, is hosting a 2 month pop-up at House of Wolf, for both a restaurant menu and a new bar menu at the downstairs Music Hall Bar.
"David Ahern is stepping into the House of Wolf kitchen for a two-month guest chef residency starting on the 26th of February and running to the 27th of April, not only serving up a five-course menu in the restaurant but also a selection of small dishes and snacks in the Music Hall bar, marking the launch of a bar food menu that will change with each guest chef.
Using only the choicest ingredients, David utilizes modern cooking techniques and employs a playful approach to flavour and texture. This teamed with the desire to wow his diners has resulted in two remarkably adventurous menus featuring some truly delicious dishes. Diners enjoying the restaurant menu (£42.50) can expect courses such as Quails Nest, a nest made from quail leg confit, spelt and herbs, with a warm devilled quails egg inside as well as beef cheek, wild mushrooms, horseradish puree, mustard mash and beef tendon puffs served with a black garlic jus. The inaugural Music Hall bar menu includes small dishes and snacks (£3.00-£7.00) including pulled pork donuts with a BBQ glaze, oxtail sliders with smoked bone marrow mayonnaise and smoked horseradish salted cauliflower popcorn.
David comes to House of Wolf, having racked up experience in both chef and consultant roles at eateries such as The Ship, The Engineer and Bens Canteen, worked as a demo chef for Maltby Street Market and hosted various pop-up dining experiences including ‘Burger Breakout’, a pop-up that was scheduled for a day but due to its popularity ran for six months. He also engages in charitable work having organized KaiWeCare, a dining experience bringing together over fifty chefs with 8 Michelin stars and more than forty AA rosettes between them to produce a nine-course meal for two hundred guests, raising over sixty five thousand pounds in one night for the New Zealand Red Cross in the wake of the Christchurch earthquake. He recently launched a food kitchen for the homeless called Street CafĂ©, which now feeds hot meals to two hundred of London's homeless a week, which will continue, with food cooked in the kitchen at House of Wolf throughout his residency."
