The Butchery Pop-up Shop in Forest Hill

The Butchery (it is a butchery, not some clever name for another type of shop) is a December pop-up in Forest Hill and is part of the SEE3 Shop Revolution, part of the Portas Pilot Project.

"The Butchery Ltd, a new Pop Up Butcher’s Shop in Forest Hill has become an instant hit with locals and Londoners. Local residents and business owners Nathan Mills and Ruth Siwinska set up the Pop Up Shop on Saturday 1st December and will be there until Christmas Eve.
The figures for the first weekend are astounding: an estimated 2000 people appeared through their doors with 392 paying customers on the FIRST day! Many customers returned throughout the following week, as much as 3-4 times with many asking Ruth and Nathan if they're going to become a permanent fixture there. It is looking very probable that they are going to stay. More details to come.
The couple source the best meat they can find, dry age it themselves in Bermondsey and cut from whole carcasses so there is always different cuts for different budgets. They are stocking a small but special range of meat from native bred animals raised naturally on small English farms. The seasonal Christmas range includes: free-range turkeys, ducks, cockerels and geese, as well as beef, pork and lamb roasts. They make their own tasty stuffings, stock and pigs in blankets, and goose fat for the best-tasting roast potatoes, as well as gammon, ham, chutneys and pork pies.
Nathan and Ruth say: “We love the meat we stock, we love to cook, and we love to talk! if people want something special, or something cheap to cook quickly in the week, we have heaps of ideas to get the best out of different cuts. It’s cool to be able to show people something new – and really cool when we get great cooking tips from our customers, too.”
Their tips and techniques have been spreading far and wide, coming to the attention recently of Raymond Blanc (one of their favourite chefs) and will feature in his TV series to be broadcast next year on slow cooking. 
Franklins of East Dulwich will be collaborating with The Butchery to provide fresh fruit and vegetables throughout December.
The Butchery Ltd was launched through The Shop Revolution, a high impact project that aims to bring empty units back into use and interest to the high street through the introduction of pop up shops. This project is one of three strands of the South London SEE3 Portas Pilot Project."
