Bubala, the vegetarian Middle Eastern restaurant that started off as a series of pop-ups a few years ago, is celebrating its first birthday as a permanent restaurant with three Sundays of guest chefs in October. The lunches cost £40 per head with sittings at 12.30pm and 3.30pm, and the line up is:
4th October – Farokh Talati
11th October – Nirmal Save, Gunpowder
18th October –Andy Oliver & Mark Dobbie, Som Saa

"Bubala, the vegetarian Middle Eastern restaurant on Commercial Street, Spitalfields, marks its first birthday this October. To celebrate the milestone, Founder Marc Summers, alongside Head Chef Helen Graham, will welcome their newfound friends, chefs and local Spitalfields heroes to cook a one-off menu each Sunday throughout the month. The confirmed line up has been announced as Farokh Talati, Nirmal Save (Gunpowder) and Andy Oliver & Mark Dobbie (Som Saa) who will each create a vegetarian feasting menu, with their twists on Buabla classics.
Bubala, which opened in October 2019 with Head Chef Helen Graham at the helm, has already received critical acclaim from the likes of Guardian critic, Jay Rayner, who said, “If you love vibrant Mediterranean dishes, Bubala will be your East End sweetheart”; and ES Magazine’s Jimi Famurewa naming Bubala a “rare gift”, and a place of “fizzing cool and poised Israeli cooking”.
Marking the occasion, the weekly chef takeover will start on Sunday 4 th October with Farokh Talati, best known for his role as Head Chef at Spitalfields institution, St John. Farokh will be putting a Parsi spin on Bubala dishes including the much-loved Halloumi with Black seed honey – served ‘Farokh style.’
Next up to join the celebrations, on Sunday 11 th October, is Nirmal Save, Executive Chef of Gunpowder, who will continue the celebrations with his regional Indian take on classic Bubala dishes.
Finally, completing the lineup on Sunday 18 th October, will be Andy Oliver and Mark Dobbie, Co-Head Chefs of Som Saa, the old-style Thai restaurant that neighbours Bubala on Commercial Street. Andy and Mark will be serving their take on the Bubala menu but with traditional Thai flavours and techniques.
There will be two sittings for each takeover, at 12.30pm and 3.30pm, with each menu priced at £40 per person, for nine sharing plates between two. Upstairs at Bubala, a private dining room seating up to 12 can also accommodate groups (subject to Covid-19 regulations)."
