Boustead & Bidois, a new pop-up from friends Chris Boustead & Tomas Bidois, will be the first of a new series of residencies at Nanna's, the cafe in St Paul's Road, Islington (near to Highbury & Islington tube. This is a new partnership between friends Chris Boustead & Tomas Bidois who met working together in London last year. Expect modern British dishes using seasonal produce, teamed with a selection of local beers and quaffable wines.
Chris was born and brought up in North Yorkshire and has worked his way up in the kitchen over the past ten years. He started at 16 in the kitchen at home in Scarborough where his love for British food really began. He has worked in London for the past 6 years at Opera Tavern Covent Garden and Upstairs at The Ten Bells Spitalfields, amongst others. His food is inspired by the area he grew up in - the edge of the North Yorkshire Moors just outside the seaside town of Scarborough and features a mix of game, seafood and seasonal British produce.
Tom has been in London for the past year and is originally from New Zealand. He has spent his career in some of the best kitchens in both New Zealand and Australia but has always been inspired by British food having grown up with an English mother. He is passionate about great produce and innovative dishes."
