Last year Cuisson held a series of POPdown suppers at The Vaults near to Waterloo; this year they're popping up with another POPdown at Borough Market, with a two storey restaurant and bar at Cathedral Street, open Tuesday to Saturday until November 2016. Go for their tasting menu, to drink in the bar, or watch out for special events.
"From 21st July until the end of the year, Cuisson will take over two stunning floors of 1 Cathedral Street to present its newest POPdown.
POPdown is an interactive restaurant first established by Cuisson in April 2015. Following the success of POPdown @the Vaults and @Borough Barista, by August 2015 it was voted the 6th best pop up in the world by American Express.

Overlook the hustle and bustle of the market as you enjoy an Asian style seasonal 5 course tasting menu at POPdown, inspired by the market traders and their produce. To compliment the dining experience, take your pick from a list of carefully selected wines and cocktails. For those looking for a more intimate setting, a private dining room is available for hire for up to 20 guests.

Drink up at Ikigai bar
On the ground floor, Cuisson launches its very own bar named Ikigai (pronounced e-key-guy), the Japanese philosophy it lives and breathes by, meaning “a reason for being”. Here, you’ll be served craft beers, wines and bespoke cocktails designed by the Cuisson mixologist. Bar snacks and small dishes are available at Ikigai, also aiming to showcase and highlight some of the best that Borough Market has to offer.
Ikigai will initially be open in the evenings from 5:30 – 11:30pm, 5 days a week (Tuesday to Saturday), serving bar snacks from £5. From mid-August it will also be open for lunch.

Look out for exclusive events, such as an oyster cooking masterclass or an Asian beer tasting evening that Cuisson will be jointly hosting with the market traders, where guests will have the opportunity to learn about the ingredients directly from the producers and culinary skills from Cuisson’s chefs.
