Green Rooms, a new hotel in Wood Green, N22, is helping to incubate food businesses by hosting them as pop-ups. First up, for a 6 month residency from 20th May, is Colombian Street Kitchen, whose authentic Colombian food is also gluten free (and absolutely delicious). Esteban Arboleda will be serving his food in the hotel restaurant daily for lunch and dinner. Please give your taste buds a treat, and support this great initiative.
"An innovative incubator project designed to help emerging restaurateurs establish their brands is set to launch at one of the capital’s most hotly anticipated hotels - Green Rooms.
Situated in a striking early art deco building in Wood Green, Green Rooms is the UK’s first arts-led social enterprise hotel and will offer affordable accommodation in a beautiful setting that inspires creativity. Principally designed to attract artists visiting and working in London, it opens fully to the public in May 2016. The unique restaurant programme is one of a number of exciting initiatives that will set it apart.
Operating on a rotational residency basis, up and coming restaurateurs will be given the ground floor kitchen and dining space at Green Rooms free of charge, as well as receiving expert tutelage to help take their burgeoning pop-ups or food truck enterprises to the next level.
Green Rooms’ founder Nick Hartwright, and Chairman and leading hotel entrepreneur Kurt Bredenbeck will deliver business support and financial advice to restaurateurs, while Johnny Smith, pioneer of the London supper club scene and co-founder of the Michelin-starred Clove Club restaurant in Shoreditch, will help the restaurateurs develop their brands and share his considerable knowledge of how to turn a pop-up into a permanent and profitable restaurant.
While budding restaurateurs are encouraged to apply for six-month residencies now, the first tenant has been confirmed – Medellín-born Esteban Arboleda, founder of the acclaimed Colombian Street Kitchen. Over the past 18 months Colombian Street Kitchen has run many short-term pop-ups and taken its street food stall to numerous leading events and food festivals across the capital, amassing a loyal army of fans who delight in its light, fresh, and authentic tapas-style Colombian cuisine.
At Green Rooms Colombian Street Kitchen will run lunch and dinner services for 50 covers every day, serving a wide range of Colombian street food dishes. Made with high-quality, locally sourced ingredients, signature dishes sure to prove a hit with Green Rooms’ guests include crispy empanadas (deep-fried pasties), multigrain arepas (corn flatbreads), tamales (parcels of vegetables and meat steamed in banana leaves) and patacones con todo (green plantain crisps with toppings). There will also be healthy lunchboxes available everyday, and special brunches at the weekend such as paisa pie and carimañolas."
