Darjeeling Express' 2015 Residency at The Sun & 13 Cantons in Soho


Asma Khan's Darjeeling Express Indian food is now in residence at The Sun & 13 Cantons in Soho, serving Monday - Saturday.  Mon-Saturday is lunch, plus bar snacks until 6pm, while Saturday also has dinner from 6pm - 9pm - bookings required.  Go and tast here amazing dishes, inc Khosa Mangsho Bengali Goat Curry & Chicken Chaap fragrant Calcutta Korma

"Asma Khan has become famous on the London Supper Club scene for her Mughlai cuisine based on recipes, which have been in her family for generations and stem from the royal kitchens of India. She has never written down a single recipe and does everything from memory. This month will see Khan take up residency at Soho pub, The Sun and 13 Cantons, which itself has just undergone an impressive renovation.
Khan’s lunch menu at the pub will be a celebration of authentic cooking from 1930s undivided India. Using local produce, the menu will also feature British seasonal specials alongside Khan’s classics, including:
Typical menu
Kala Channa with Paratha nutty and earthy black chickpeas served with tawa fried flat bread
Paneer Samosa stuffed with Paneer, sweet corn and chopped coriander leaves. Served with chutney
Venison Kofta cooked in traditional “shikar” or hunting spices
Chicken Chaap fragrant Calcutta Korma with garam masala
Hyderabadi Haleem a combination of lentils, wheat and lamb slow cooked for several hours & blended together, garnished with green chillies, caramalised onion, mint and ginger
Khosa Mangsho Bengali Goat Curry with Potatoes
Chicken Rezala Bengali Mughlai stew with lemon, chillies & mint
Baghara Baigan Hyderabadi aubergine in a tangy tamarind base
Bhappa Doi Bengali yogurt cooked in an earthenware pot
Shahi Tukra bread fried in ghee and soaked in saffron infused milk
Khan’s style of cuisine is lesser known in the UK and despite it’s royal heritage, should not be mistakenly associated with the state of Rajasthan. Khan takes influences from her father’s Rajput and North Indian background, as well as incorporating traditions from Calcutta where she was born and raised by her parents. Many a holiday would also be spent at her parents’ancestral home near Chhatari and it was here she learnt some of her favourite recipes from her family’s royal kitchens with family visiting from across North India right down to Hyderabad in the South.
Khan’s Darjeeling Express residency begins at lunchtime on 23rd June at The Sun and 13 Cantons on the corner of Beak Street. Lunch reservations can be made directly by telephoning The Sun & 13 Cantons."
