"Fresh from New York, The Hague and Copenhagen, speciality cheese brand Castello is about to pop up for 7 weeks in its first UK concept store on Commercial Street, Shoreditch. With over 30 different varieties available to taste and buy, it promises to be an immersive 360° cheese experience like no other.
A veritable cheese emporium, it will retail all your favourite Castello cheeses, cheese accessories, wine, beer, cider as well as Castello cheeses not yet seen in the UK such as Castello Höhlenkäse Classic which is matured in limestone caves 35 metres underground. With regular tastings you will even have the chance to influence which cheese we launch next.
Unika, a series of premium artisanal cheeses created in collaboration with some of Denmark’s most celebrated chefs, inspired by Nordic culture and found on the cheese menu of the world’s best restaurants including Noma, will also be available to try and buy.
A fresh deli counter means your desired amount of cheese will be expertly cut and wrapped for you to enjoy at home with friends and there is even a station to build your own hamper with delectable chutneys and delicious drinks pairings, ideal for a cheese lover’s Christmas treat.
Throughout the 7 weeks, events will run including tasting lunches for a fiver, live Q&A sessions with foodie adventurer and ‘gastronaut’ Stefan Gates and you will have the chance to pick a drink from top wine expert, Matt Day’s ‘drinks cabinet’ who will then expertly match it to one of the numerous cheeses.
A perfect pairings bar will serve innovative combinations for cheese, drinks and nibbles – putting to bed the myth that red wine is always the right match for cheese. The bar will be open every Thursday, Friday and Saturday."

I went to this and it was really good. The chap who does pairings is called Matt Day and he really knows his stuff. Thanks for the tip Dan!
