This March and April House of Wolf welcomes Jason Howard from the Connaught Hotel in Mayfair who is on a mission to educate you about Caribbean food. Over two Tuesday nights - 11th March and 8th April - he will serve up a rich and varied fine dining menu. Very tempting!
“Caribbean food is not given the love it deserves.” Chef Jason Howard, Chef at the luxury Connaught Hotel in Mayfair, is on a mission to change the way we think about Caribbean food and will be hosting a 6 course modern Caribbean menu at the House of Wolf in Islington in collaboration with Kitchen Theory.
Whilst London offers an abundance of Caribbean takeaways serving up overly-spicy greasy curries, dry jerk chicken and a mountain of rice and peas; there is a large gap in the market for the refined modern Caribbean cuisine. Because of the region's diverse population, Caribbean cuisine is made up of an exciting fusion of African, Amerindian, Spanish, French, East Indian, Arab and Chinese cuisines. The Islands’ tropical surroundings also offer a variety of exotic fruits and vegetables such as cassava, plantain, breadfruit and yams.
Chef Jason Howard aims to redefine the way we see Caribbean cuisine and will be combining his experience as a trained fine dining chef and his Caribbean roots to create a menu with new and exciting flavours, beautifully presented and well balanced flavours. Chef Jason believes the key to the cuisine is the balance of flavours, each skilfully crafted dish is well thought out to create a balance of subtle spices without being spicy, melt in the mouth buttery finishes without being too fatty and the use of fruits working in harmony with savoury ingredients."
