Spring chicken and pistachio nut terrine with wild mushroom purée and sweet pickled spring onions
Peppercorn tuna pepper sauce and spinach crisps
Beetroot poached fillet of pork, crispy pork scratching, rhubarb and Swiss chard salad and spring beet dauphinoise
Rhubarb and custard tart with rhubarb and crusted sweets ice cream and rhubarb crumble jelly"
