SpagWednesday is the spaghetti equivalent of Daniel Young's famous BurgerMonday. The concept is the same - delicious food cooked by an excellent chef, in this case Rowley Leigh of Le Cafe Anglais. These events usually sell out very fast, but there are still tickets left for both sittings (6.45 and 8.45) so act now to reserve your space!
"Spaghetti a cacio e pepe may be the most simple and minimalist of pasta standards but there is nothing easy about it. Amalgamating the cacio (Pecorino Romano cheese) and the pepe (freshly ground pepper) with the spaghetti in the pasta cooking pot requires an elusive and seemingly contradictory blend of delicacy and vigour.
Le Café Anglais’ Rowley Leigh, one of the founding fathers of modern British cooking, wrote beautifully about the great pasta classic he called ”the very flavour of Rome” in an article for the FT:
When made properly, the rasping acidity of the pecorino and the fierce bite of the pepper are a formidable combination, but the method is equally beguiling.
